For the porridge

  • ¾ cup coconut milk or unsweetened almond milk
  • ½ cup almond milk you may need 1-2 tbsps more
  • cup water
  • 1 cup rolled oats gluten-free if needed
  • 1 tbsp almond butter or any other nut butter
  • ½ tsp cinnamon or to taste or 1-2 cinnamon sticks
  • 1 star anise optional

For the caramelized apples

  • 2 tsp coconut oil
  • 1 1/2 tbsp maple syrup
  • 1 apple big and organic, peeled, sliced and cored*
  • 1 tbsp fresh orange juice
  • 1/2 tsp cinnamon or to taste
  • 1 tsp vanilla extract


  • Almond butter
  • Maple syrup
  • Almonds or pecans chopped


  • In a saucepan, add coconut milk, almond milk, water, cinnamon and star anise. Bring to a boil, add rolled oats and reduce the heat to low. Cook for 12-15 minutes or until creamy, stirring occasionally. Add almond butter when oatmeal is nearly ready.
  • Pour in 1 or 2 tablespoons of milk if needed.
  • In a skillet, heat the coconut oil and the maple syrup. Add sliced apples, cinnamon and vanilla extract and orange juice. Stir to coat and cook over medium heat for 3-5 minutes or until apple slices have softened.
  • (Pro tip: You can add to the porridge some apple slices or a whole apple sliced or cubed - if using two- during the porridge cooking time).
  • Serve the creamy apple pie oatmeal warm and top with caramelized apples, maple syrup and a handful of almonds or pecans.


How to store Apple Pie Porridge
If you have any leftovers of this creamy porridge recipe, you can transfer it in an airtight container and store in the fridge for up to 5 days. Reheat on the stovetop for 2-3 minutes before serving. Make sure to drizzle it with some milk/water to help it cook faster and not stick to the pan.
*or 2 small apples, I like Golden Delicious.
